​2 1/2 tsp. chili powder
1 tsp. cumin
1/2 tsp. cayenne pepper
1/2 tsp. minced garlic
1 1/2 lb. shrimp, deveined & shelled
4 C. Uncle Ben’s instant brown rice, cooked
1/4 C. feta cheese
1 Tbsp. olive oil
1-2 C. Sarah Jane’s Black Bean & Corn Salsa
Cook rice according to package directions. Mix spices together in a small bowl and set aside. In a large skillet over medium-high heat, add olive oil, minced garlic and shrimp. Sprinkle with the spice mixture, stir. Cook through and remove from heat. In serving bowls – layer rice, black bean & corn salsa, and shrimp. Top with your favorite toppings such as avocados or sour cream. Try substituting chicken in place of shrimp.
